Our favorite way to eat it right now? In chia pudding, a mini meal that’s the perfect solution for anyone who wants to keep it light—but still really nutritious—in the AM.

This is a weight loss food which can be used as breakfast on the go. Enjoy this healthy treat with you guests as chia dessert.
The basic principles behind this recipe are straightforward. Once you get ’em down, you’ll be able to assemble this treat in your sleep. Prep the pudding by mixing chia seeds in milk (ideally almond milk, but some combo of milk or coconut milk will work too), which allows the particles to expand. Then you add a touch of your sweetener of choice (we like honey, maple syrup or agave) and leave the mixture in the fridge overnight. By morning, the protein and omega-3-rich seeds will have transformed into a pudding with a deliciously chewy. Just add your toppings (if you like) and grab a spoon.
Pro tip: Prep two or three jars of pudding at once and store them in the fridge for up to 3 days.
